As we all know, the production of wine is based on water, a lot of process water and cleaning water are needed in the brewing process.
There are many by-products and wastes produced in the brewing process in the wastewater. However, at present, the wastewater of many distilleries is directly discharged and untreated, therefore, brewery wastewater treatment has become a major problem in water pollution treatment.
Generally, the raw materials of wine making are crops, and the waste water produced in the production process is organic waste water. For different wines, the amount of wastewater produced and the concentration of harmful substances in the wastewater are different.
At present, it only focuses on beer and briefly introduces the brewery wastewater.
The main raw materials for brewing beer are barley, rice and hops.
The method of brewing varies with different kinds of beer. However, it is generally divided into two major technological processes of wheat making and brewing. Some breweries buy malt only by brewing technology.
Malting, also known as malting.
The process water includes wheat soaking water and cooling water. The main pollution comes from the water for soaking wheat.
Wheat wastewater is a kind of organic wastewater with deep color and easy to corrupt, COD concentration is 500-800mgl, BOD5 concentration is 300-500mgl.
Generally, about 30t of malt is produced per 1t of malt, which is discharged intermittently.
Brewing can be divided into refining, fermentation (pre fermentation), wine storage (post fermentation), filtration (we can provide the solution of filter element in brewery) and packaging. In recent years, some breweries have combined two processes of fermentation and wine storage into a large conical tank.
The waste of saccharification process includes wheat bran, hot solidified matter and condensed solid matter.
Wheat dregs is a by-product of wort preparation and filtration, containing 75-80% water, and composed of protein, fat, starch, reducing sugar, crude fiber and ash.
In the process of wort boiling, the heat coagulate is produced by protein denaturation, polyphenol oxidation and polymerization. The condensed solids are precipitated in the cooling process of wort, and the main components are protein, carbohydrate, polyphenol and ash.
The waste water of saccharification process mainly comes from the water for brushing and cleaning of saccharification pot and gelatinization pot, as well as the water from the bottom of the storage pool of wheat bran. Generally, the hot (cold) solidified matters are also contained in the waste water and discharged.
There are many organic substances in the wastewater produced by the refining process, and the COD concentration is as high as 20000-40000 MGL.
The amount of waste water discharged is about 5-10% of the total waste water, and the method of intermittent discharge is adopted.
The waste of fermentation and wine storage process is waste yeast, which is precipitated in the beer fermentation process.
Generally, for the production needs, the precipitated yeast is reused after washing, but the surplus yeast and inactive yeast are discharged along with the waste water if they are not comprehensively utilized. The other components of yeast are protein, fat, fiber, ash and nitrogen free extract, except for 80-85% water content.
The wastewater of this process comes from washing water, with COD concentration of 2000-3000mgl. The wastewater discharge accounts for about 15-20% of the total wastewater, and the intermittent discharge mode is adopted.
The waste water in the packaging process comes from bottle washing water, spray sterilizing water, cotton washing water, ground washing water and residual liquor from the damaged packages.
The discharge of this part of water is large, accounting for about 30-40% of the total amount of wastewater. The COD concentration is 500-800mgl, which is discharged continuously.
In addition, there are a large number of cooling water and concentrated water produced by electrodialysis in the brewing process, which are basically uncontaminated and recycled in most plants.
According to the data exchanged every year in the beer industry, the water consumption of the brewing process varies greatly among the factories.
Generally, the wastewater discharged from 1t liquor is 15-30t, but some factories also have 80-100t records.
The concentration of COD at the main outlet of brewery is 1000-1500mgl.
The concentration of harmful substances in the waste water of alcohol distillation is the highest. Because the production of alcohol only uses starch or sugar in the raw materials, other components are not only not destroyed, but also produce a variety of amino acids in the fermentation process, with high nutritional value.
The water content of distilling waste liquid is generally 90-95%, and the components of solid are protein, fat, nitrogen-free extract, fiber, ash, etc.
The content of protein is not only as high as 27% (corn alcohol), but also the composition of amino acids is very complete, almost including 13 kinds of amino acids needed by animals.
In a word, there are many kinds of nutrients and valuable material resources in the wastewater produced by brewing. For many years, although the distilling liquor industry has sold wheat straw and alcohol distilling waste liquid as feed, some manufacturers have also introduced deep processing technology to comprehensively utilize the solid substance in the waste water. However, in the brewing industry, especially in the alcohol industry, the pollution of wastewater has not been completely eliminated, so the strength of wastewater treatment needs to be strengthened.
So as to reduce the harm to the environment.
