Emulsifier is a kind of substance that can make the mixed liquid of two or more immiscible components form a stable emulsion. Its action principle is that in the emulsification process, the dispersed phase is dispersed in the continuous phase in the form of micro droplets (micron level). The emulsifier reduces the interfacial tension of each component in the mixed system, forms a solid film on the surface of the micro droplets, or forms an electric double layer on the surface of the micro droplets due to the charge given by the emulsifier, prevents the micro droplets from aggregating with each other, and maintains a uniform emulsion. From the phase point of view, the emulsion is still a heterogeneous system. The dispersed phase in emulsion can be water phase or oil phase, and most of them are oil phase; The continuous phase can be oil phase or water phase, and most of them are water phase. Emulsifier is a kind of surfactant with hydrophilic and lipophilic groups. In order to express the hydrophilicity or lipophilicity of emulsifiers, the “hydrophilic lipophilic equilibrium value (HLB value)” is usually used. The lower the HLB value, the stronger the lipophilicity; On the contrary, the higher the HLB value, the stronger the hydrophilicity. The HLB values of various emulsifiers are different. In order to obtain a stable emulsion, appropriate emulsifiers must be selected.
